The perfect accompaniment to panfried fish fillet or crispy pork belly, or on its own as an ultra light and fresh salad.
It takes literally 2 minutes to make. For two small servings, you just need a small bulb of fennel (about the size of your fist), one crisp Granny Smith apple, juice of a lemon, slurp of EVOO, salt and pepper. That’s it.
Shave the fennel (or slice it real thin) and finely slice the apple. Place in a bowl and toss together with juice, oil and S&P. Serve.
For tasty variation, add shaved Parmesan cheese.
