I adapted this recipe from The Healthy Chef, and in her words this cake is “rich in antioxidants and heart healthy essential fatty acids that promote good health”. It’s so easy to make and not overly sweet 👌🏽
2 ½ cups (250g) almond meal
½ cup (good quality) cocoa
1 teaspoon baking powder
3 free-range eggs
½ cup extra virgin olive oil
½ cup milk (almond or coconut is fine)
½ cup raw honey
Preheat oven to 160C
Combine almond meal, cocoa and baking powder in a bowl.
Add the eggs, olive oil, milk and honey.
Mix well until a smooth batter forms.
Spoon into a 20 cm / 8 inch round baking tin, greased with butter and dusted with cocoa powder.
Bake for 50 minutes or until just cooked through (slightly undercooked is better).
Remove from the oven and cool.
Drizzle the glaze over (see below for that).
For the chocolate glaze, melt a packet of 85% Lindt chocolate, add a couple of tablespoons of extra virgin olive oil, add a couple of teaspoons of cocoa and a pinch of sea salt, then whisk until super smoooooth. Drizzle over the cake. Sprinkle some big sea salt flakes on top.
